In a medium sized mixing bowl, combine the following ingredients:
300 grams ground pork

1 green onion, chopped
250 grams ground or finely chopped shrimp
2 ½ teaspoons of Teriyaki sauce

½ teaspoon of Umami powder (MSG)

½ teaspoon of finely chopped garlic

2 teaspoons of oyster sauce

¼ teaspoon of sesame oil

2 grams of fresh ginger, finely chopped
A few shakes of ground black pepper (about ⅛ teaspoon)
Mix the ingredients until they are well blended.
Optional: Pan-fry a small amount of the mix with a bit of oil to serve as a taste test.
Fry the test pieces for about 2-3 minutes on each side. Make sure they are well browned and fully cooked.
This is your chance to tweak the flavor, if you so desire. You can leave the mix as is or add more of any particular ingredient to suit your taste.
Refrigerate the filling until you are ready to make your wontons.
Use 8-10 grams of mix per wonton (about 1 teaspoon).
Wontons should be made and cooked the same day the filling is made.
