This Caesar dressing is better than anything off-the-shelf I’ve ever tasted. After several iterations and experiments with ingredient quantities, I've got it tweaked perfectly and it’s been a hit with my guests. The process for making it is very similar to making hollandaise sauce with the key difference being the use of olive oil instead of butter. Mayonnaise is made in using a very similar process.
